Norwegian Apple Squares
1 C. soft butter
2 1/2 C. sifted sugar
2 eggs
1 1/4 C. sugar
2 tsp. baking powder
4 to 5 pared, grated apples
Blend butter, sugar, flour, and baking powder together as for pie crust. Beat
eggs and add to flour mixture. It will be crumbly. Press half of dough in
buttered 13x9 inch pan. Spread with grated apples and top with remaining
crumbled mixture. Bake at 400* for 35 minutes, or until lightly browned. Cool.
Spread with confectioners sugar flavored with rum. Cut in squares.
Russian Snowballs
1 C. butter
1/2 C. powdered sugar
2 1/4 C. flour
1 egg yolk
1/2 C. chopped walnuts
1 tsp. vanilla
Cream butter and sugar. Add egg yolks and vanilla. Stir in flur and nuts.
Shape into 1 inch balls. Bake on ungreased cookie sheets at 350* for 12 to 15
minutes, until a light golden color. While hot, roll in powdered sugar until
they are fully coated.
