Breads & Rolls

 

Irish Soda Bread

2 C. whole wheat flour
1 C. white flour
1 tsp. baking soda
2 tsp. sugar
1 pinch of salt
4 Tbsp. margerine
1 1/4 C. buttermilk

Preheat oven to 400*. Mix dry ingredients in bowl. Add margerine and blend with fingers. Pour in buttermilk. Knead dough for a minute; shape into a flattened, round loaf. Place on a greased cookie sheet. With a knife, score an "x" on loaf. Bake for one half hour. Reduce heat to 350* and bake for 1/2 hour longer. Cool and slice. Serve with butter.

 

Mango Bread (Guam)

3 C. flour
1 tsp. soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 C. shortening
3/4 C. sugar
2 eggs
1 C. diced mango with 1 Tbsp. lemon juice
1/2 C. chopped nuts

Sift the flour, soda, baking powder, and salt. Cream shortening and sugar. Add beaten eggs. Add flour mixutre alternately with juicy mangoes. Add nuts. Pour into greased bread loaf pan and bake in a preheated 375* oven for about 1 hour.
